Amish-Style Baked Apple Berry Oatmeal
With a dish of baked oatmeal, you’ll have breakfast ready for the week! This recipe is loaded with great ingredients like oats, nuts, blueberries and apples. Unlike stove-top oats, baked oatmeal has more of a breadlike consistency. You can dress it up with a little milk or cream, or even a scoop of yogurt for a parfait style dish.

Amish-Style Baked Apple Berry Oatmeal
Ingredients:
- 3 cups Honeyville Regular Rolled oats (#1068)
- 1 1/2 tsp Clabber Girl Baking Powder (#2847)
- 2 tsp AP Ground Saigon Cinnamon (#3626)
- 1/4 tsp ground nutmeg
- 3/4 tsp Regal Fine Sea Salt (#1146)
- 1/2 cup real maple syrup or lightly packed C & H Brown Sugar (#2261)
- 2 1/2 cup milk
- 2 large eggs
- 1 tsp Blue Cattle Mexican Vanilla (#6702)
- 4 Tbsp Kirkland Salted Sweet Cream Butter (#1723)
- 2 1/2 cups diced fruit like a combination of Dole Chef-Ready Cuts Diced Apples (#1263) and Wyman’s Wild Blueberries (#1218)
- Nuts (optional; can add Diamond Fancy Medium Pecan Pieces #2812 or Kirkland Walnut Halves & Pieces #1293)
Instructions:
- Lightly spray an 8X12†or 9X13†baking pan Vegalene Spray (#1212) and set aside.
- Preheat the oven to 325 degrees F.
- In a large bowl, whisk together the oats, baking powder, cinnamon, nutmeg, salt and brown sugar (if using maple syrup instead of sugar, combine with liquid ingredients).
- In a separate bowl, whisk together the milk, eggs, and vanilla. Pour over the dry ingredients and add the melted butter. Whisk to combine.
- Arrange the fruit evenly over the bottom of the baking dish and pour the oatmeal mixture over the top.
- Bake for 35-45 minutes until the top is golden and the mixture is set (not very jiggly).
- Serve warm, with a little milk or cream, if desired.
