Thai Chicken with Cilantro Dipping Sauce

What are rice noodles?

All of the ingredients in this recipe may look familiar except for the Rice Noodles. We know it isn’t a common ingredient and is popular in a lot of Asian inspired dishes. They are made from rice (shocking!), and have a bit of a chewy texture. Don’t expect the texture to be the same as what you would get from a spaghetti noodle (#1331). We’re slowly becoming big fans of these new noodles!

Thai Chicken with Cilantro Dipping Sauce

Ingredients:

Cilantro Sauce:

Instructions:

  1. First, whisk the Cilantro Sauce ingredients in a bowl (#7756). Store covered in the fridge until ready to use.
  2. Heat the chicken on a warmed skillet. Place the desired number of thawed chicken breasts in a skillet. Heat for 5-6 minutes, or until hot, turning twice. Once they are warmed through, remove from the pan.
  3. Then, grill or roast veggies of your choice. We prefer chopped peppers and red onion for this dish, but zucchini or yellow squash (#7860) would be good too.
  4. While those are grilling, start on the rice noodles. In a pot of boiling water, add the rice noodles and stir to separate. Cook for 2-3 minutes, or until just tender. Drain.
  5. Serve noodles, veggies, and chicken with your cilantro sauce on the side or drizzles on top. Enjoy!
