Grilled Halibut with Chimichurri

A refreshing dinner to welcome warmer weather- this grilled halibut is topped with a homemade chimichurri sauce and served with a salad and grilled veggies.

Grilled Halibut with Chimichurri

Chimichurri Sauce:

Instructions:

  1. First, prepare the Chimichurri Sauce by placing the parsley, garlic, and oregano into a food processor. Blend until smooth, then transfer to a bowl. Whisk in the oil, vinegar, salt, and red pepper flakes. Store in the fridge until ready to use.
  2. For the halibut, pay dry with paper towels. Sprinkle with salt and pepper, then place onto the grill for 10 minutes per inch of thickness, turning halfway.
  3. Set the halibut onto a plate and drizzle the chimichurri overtop. Serve with greens and grilled vegetables.
