Cauliflower Gluten Free Salad

Salads are an ideal meal companion. You may enjoy them as a side dish, starter, or even a main course. In any which way, salads compliment your meals with some good quality nutrients.

Personally, I enjoy salads that are easy to prepare; particularly the ones involving minimum cooking as it helps to restore maximum nutrients in the vegetables (or fruits) used. Moreover, with the constant fear of Covid, it makes sense to extract maximum nutrition from each meal we consume to boost and maintain our immunity.

In fact, ever since this pandemic has spread its wings around the globe, we are including plenty of fresh, colorful produce in our mealtimes. Luckily, the kids in the house are also taking well to healthy eating and don’t fuss anymore about consuming greens and veggies regularly in their meals. Now, that’s a happy mother talking here!

Nevertheless, it’s also my duty as a mother to provide my family a variation in food choices, else they might get bored of eating the same/ similar food every other day and get back to their unhealthy habit of munching junk food.

To break the monotony, I tried serving my otherwise picky family a colorful platter of cauliflower salad, which is gluten-free, very colorful, and super healthy. To top it all, it doesn’t take too long to assemble this dish either. You simply need an efficient microwave to do a little bit of cooking. Cauliflower Gluten Free Salad

Appliances:

  • Large bowl
  • Microwave oven
  • Microwave-safe bowl
  • Ladle
  • Small bowl
  • Whisk
  • Spoons

Ingredients:

Directions

  1. Microwave cauliflower florets with ¼ cup of water in a microwave-safe bowl for 4-5 minutes or until the florets are cooked yet tender. Keep it aside for the cauliflower to cool.
  2. In a small bowl, whisk orange juice, orange zest, canola & virgin olive oil, parsley flakes, salt, pepper, and ginger powder until well combined.
  3. In a large bowl, mix all the remaining ingredients with cauliflower and pour dressing over it.
  4. Mix the ingredients well to coat everything with dressing.
  5. Serve and enjoy!
