Cranberry and Apple Stuffed Pork Loin

This delicious stuffed pork loin only requires a few ingredients and is perfect for the holidays. Although we love the traditional ham and turkey, this recipe is a great way to change things up while still having some of your favorite holiday flavors. Just pair it with a side of mashed potatoes, veggies, and fresh rolls for a complete dinner.

Cranberry and Apple Stuffed Pork Loin

  1. Preheat your oven to 425F.
  2. Then, combine apples, cranberries, nutmeg, and pepper in a small bowl.
  3. Stuff the filling down the center of the roast from top to bottom. Then, use bakers twine to tie it back together in 1 1/2 intervals down the length of the roast.
  4. Place in a roasting pan and season all over with salt and pepper, then roast uncovered for about 35 minutes, or until it begins to crisp.
  5. Reduce temperature to 325F and make a foil tent over the roast. Contintue to cook until the thickest part is 155F (it will continue to rise out of the oven).
  6. Allow to rest for 15 minutes before slicing. Enjoy with a side of mashed potatoes and veggies.
