Cranberry Orange Scones
Ingredients:
- 2 3/4 cup flour
- 1/3 cup C & H Granulated Sugar (#1632)
- 2 Tbsp BBF LIVfit Organic Superfood Blend (#3514)
- 1 Tbsp Clabber Girl Baking Powder (#2847)
- 1/2 tsp Clabber Girl Baking Soda (#2848)
- 3/4 tsp Regal Fine Sea Salt (#1147)
- Zest of 1 large orange
- 3/4 cup Wyman’s Fresh Frozen Cranberries (#1220)
- 1/2 cup BBF Coconut Oil (#8287)
- 1 Tbsp Blue Cattle Truck Mexican Vanilla (#6702)
- 1/2 cup orange juice
- 1/2 cup BBF Oatsome Organic Oat Milk (#1907)
- 2 Tbsp C & H Pure Cane Brown Sugar (#2261)
Orange Glaze:
- 1 cup C & H Powdered Sugar (#1151)
- 3 Tbsp orange juice
- 1 tsp orange zest
Instructions:
- First, line a Crestware Cookie Sheet (#4020) with parchment paper (#1153) and set aside.
- Then, whisk the first 7 ingredients together. Then, using your hands or a Norpro Pastry Cutter (#2433), add the coconut oil. To the crumble mixture, fold in the cranberries.
- In a separate bowl, whisk together the vanilla, orange juice, and oatsome. Slowly add it to the flour mixture, until the dough is just moist.
- Then, transfer dough to a lightly floured surface and gently knead a few times. Pat the dough into a circle, then divide it into 8-10 triangles.
- Next, arrange the triangles about 2 inches apart on the prepared cookie sheet. Place in the freezer for 30 minutes.
- Meanwhile, preheat oven to 400F.
- Now, use a pastry brush to brush some oatsome milk on the top of the scones, followed by a little bit of brown sugar. Bake for 15-20 minutes, or until golden brown.
- While the scones bake, prepare the glaze by whisking together the powdered sugar, zest, and orange juice in a small bowl. Set aside.
- Transfer the scones to a Crestware Cooling Rack (#1145). Once cooled slightly, drizzle the glaze on top. Enjoy!
