Guacamole & Grilled Fish Tacos with Pineapple Salsa
Whole grain tortillas filled with grilled tilapia, guacamole, a simple pineapple salsa, and fresh lime. Serve with chips and guacamole and a side of beans and rice for an easy Mexican Restaraunt type meal at home.
How can I change this recipe?
There are two simple swaps we suggest with this meal:
- Swap the protein. Try using AquaStar Black Tiger Shrimp (#2806), Main St. Meats Carne Asada Steak (#1755), Main St. Meats Chicken Strips (#2609), or tofu.
- Swap the tortillas. For a low carb option, use Folios Parmesan Cheese Wraps (#1719). You can also try corn tortillas or Receta de Oro Flour Tortillas (#4970).

Guacamole & Grilled Fish Tacos with Pineapple Salsa
Ingredients:
- 1 lb. Pacific Seafood Tilapia Fillets (#8027), thawed
- Regal Fine Sea Salt (#1146) and AP Table Grind Black Pepper (#1029), to taste
- 1 cup Simplot RoastWorks Flame-Roasted Pineapple & Pepper Blend (#2411), thawed
- 2 Tbsp SupHerb Farms Fresh Frozen Chopped Cilantro (#1921), thawed
- 8 whole grain tortillas
- 1 cup Calavo Fiesta Guacamole (#1060)
- 8 lime wedges
Instructions:
- First, season tilapia with salt and pepper. Grill for 2 1/2 minutes on one side, flip and grill 2 1/2 more minutes. Remove from grill and use two forks to gently pull it apart. Set aside.
- Now, combine the Chopped Cilantro and Pineapple & Pepper Blend for a simple salsa. Store in the fridge until ready to use.
- Next, heat the tortillas. Then, spread guacamole down the center of the tortilla, topped with fish and the pineapple salsa. Repeat until all the tortillas are filled, then add a squeeze of lime juice. Enjoy!
