Cheesy Noodles and Vegetables
Ingredients:
- 1 1/2 cup Reames Homestyle Egg Noodles (#1407)
- 1/4 cup Kirkland Butter (#1723)
- 1/4 cup Turkey Brand Flour (#2285)
- 2 cups milk
- 2 cups Tillamook Shredded Cheese (#1866)
- 1/2 cup crushed croutons
- 2 cups Flav-R-Pac 5-Way Mixed Vegetables (#1493)
- 1 tsp Kirkland Minced Garlic (#1289)
- 1/2 tsp Regal Sea Salt (#1146)
- 1/2 Tbsp Dijon mustard
- 1/3 cup fresh grated parmesan cheese
Instructions:
- First, preheat oven to 350F.
- Cook the noodles by bringing 4 quarts of water to a rapid boil. Add 2 tsp salt, if desired. Add frozen noodles and return to a full rolling boil, stir to separate. Cook noodles uncovered for 20 minutes or until desired tenderness, stirring occasionally. Add vegetable blend 5 during the last 5 minutes. Drain thoroughly and set aside.
- Next, melt the butter in a saucepan and add the garlic. Cook for 30 seconds, then add the flour and salt. Cook until smooth.
- Now, slowly add in the milk and bring to a boil. Reduce heat and cook for 2 minutes, then add the mustard and cheese. Keep stirring until smooth, then add the noodles and veggies to the pot to combine.
- Pour into a casserole dish and top with parmesan cheese and crushed croutons. Bake for 20-25 minutes, or until it begins to brown and is bubbly. Serve warm.
