Grilled BBQ Chicken & Pierogy Packets

With busy summer schedules and hot weather, we crave easy dinners. We can only eat hamburgers and hot dogs so many times! So, if you’re looking for something new….try grilled pierogy packets. These potato-filled pockets are wrapped in foil with chicken, onion, and a delicious barbeque sauce, then cooked on the grill for delicious flavor.

Although the recipe below has instructions for grilling, these can also be baked or cooked over a campfire. Just cook until the pierogies are tender and the chicken is warmed through.

Homemade BBQ Sauce

Shirley J Barbeque Sauce Mix (#3044) is the most versatile BBQ product on the market. Just mix 1 part of the mix with 3 part of water or your choice of liquids (soda, beer, fruit juice etc.), and stir until smooth. For best results, simmer for 2-3 minutes then use in the recipe below.

Grilled BBQ Chicken & Pierogy Packets

Ingredients:

Instructions:

  1. Preheat grill to 400°F.
  2. Mix everything but the butter in a large mixing bowl and toss together.
  3. Evenly distribute pierogies, onions and chicken between 4 heavy-duty foil sheets (about 12×18 inches each) sprayed with nonstick cooking spray. Top each packet with 1 Tbsp butter. Tightly seal foil packets.
  4. Grill packets for 30 minutes, turning halfway through.
  5. Serve with your other grilled favorites, like corn on the cob!
