Multi-Purpose Muffin Mix: 5 Ways to transform your Raspberry Mix Beyond Muffins

If you add vanilla and butter instead of water and oil, you can create soft and chewy Raspberry Cookies that are packed with flavor!

  • 2 1/2 C. Raspberry Muffin Mix (#3316)
  • 2 Eggs
  • 8 Tbsp. Melted Butter
  • 1 Tbsp. Vanilla Extract

Roll dough into evenly sized balls and place onto a baking sheet. (Try AP’s perfectly pre-cut Parchment Paper (#1153) for easier cleanup!) Raspberry Zucchini Bread:

Zucchini bread has never tasted better! Especially paired with a lemon almond drizzle, it’s a must-try.

  • 2 C. Shredded Zucchini
  • 1 Egg
  • 1/4 C. Oil
  • 3/4 C. Water
  • 2 1/2 C Raspberry Muffin Mix (#3316)
  • 1/2 C. Flour (#3199)

Icing:

Raspberry Pancakes:

We love our traditional pancake mixes, but adding the Raspberry Muffin Mix to your pancake mixes is a glorious combination!

Raspberry Syrup:

  • 1/4 C. Butter, Melted
  • 1 C. Real Maple Syrup
  • 1 C. Raspberries

Add both mixes to water, blend with a whisk. Pour batter onto a lightly greased griddle, cook! For the syrup, melt butter in a saucepan over medium-low heat. Add syrup and berries and heat for about 3-4 minutes. Serve pancakes with syrup, and top off with more raspberries if desired!

Raspberry Muffin Crepes:

These delicious crepes are a breakfast game-changer!

  • 1 C. Raspberries
  • 2 Eggs
  • 2 Tbsp. Butter
  • 1 (8 oz.) pkg. Cream Cheese, softened
  • 1 C. Raspberry Muffin Mix (#3316)
  • 3/4 C. Sugar (#1632)
  • 1/2 C. Milk
  • 1/2 C. Water

Whisk Raspberry Mix, eggs, sugar, and cream cheese into a large bowl. Slowly add butter, milk, and water. Finally, add raspberries. Heat lightly oiled griddle or frying pan on medium-high heat, and spread a thin layer of mixture. Cook until top of the crepe is no longer wet and the bottom has turned light brown. Flip and repeat. Top off with some fresh fruit or chocolate drizzle if desired!

Raspberry Muffin Cobbler:

Who doesn’t love a good cobbler? We promise this muffin cobbler recipe will have nothing but delicious and satisfying results!

Filling:

Topping:

  • 2 C. Raspberry Muffin Mix (#3316)
  • 1 C. Milk
  • 1 Tsp. Sugar (#1632)

Add raspberries (#1219), sugar, cornstarch, lemon juice, lemon zest, and vanilla extract to a large bowl, mix. Add mixture to a lightly greased baking dish. In a separate bowl, stir together the Raspberry Muffin Mix, and milk until blended. Pour muffin mix evenly over berries and spread batter to the edge. Sprinkle Tsp. of sugar over the top before baking. Bake for 30-35 minutes at 375 degrees. Cool and serve with ice cream if desired!
