Roast Beef Onion Marmalade Sandwich
This sandwich is what dreams are made of: Roast Beef piled high on ciabatta bread with melted cheese, arugula, caramelized onion marmalade and fig aioli with mixed greens and vinaigrette.
Can this be made ahead?
While individual parts of this recipe can be made in advance, we suggest assembling right before eating for best results. Here is what you can prepare ahead of time: the Fig Aioli and Caramelized Onion Marmalade. In addition, you can separate the fillings for each sandwich for easy preparation.

Roast Beef Onion Marmalade Sandwich
Ingredients:
- Sliced Roast Beef (#1750)
- Ciabatta Buns (#1051)
- Fotina cheese*
- Arugula
Caramelized Onion Marmalade*:
- 1/2 Tbsp Kirkland Butter (#1723)
- 1 1/2 Tbsp brown sugar (#1150)
- 5 cups chopped onion (#5772)
- 2 tsp Minced Garlic (#1289)
- 1 Tbsp Red Wine Vinegar
- Pinch of salt (#1146) and pepper (#1029)
Fig Aioli, optional:
- 1 whole egg plus 2 large egg yolks
- 1 tsp minced garlic (#1289)
- 2 cups Avocado Oil (#3516)
- 3 Tbsp lemon juice
- One 8-oz jar Fig Jam
- Salt (#1147)
Instructions:
- For the Marmalade, begin by melting the butter in a large skillet. Add the sugar, and cook until the sugar dissolves, stirring frequently. Add onion and garlic to the pan. Cover and cook for 30 minutes or until the onions are tender, stirring occasionally. Then, uncover and add vinegar to the mixture. Cook uncovered, stirring frequently, for 10 minutes, or until golden brown. Add salt and pepper to taste. Store extra in the refrigerator.
- Next, make the Fig Aioli. First, add the eggs and garlic to a food processor. Then, slowly add the oil and lemon juice. Next, add in the jam and process until mixed well. Season with salt.
- Now, begin on the sandwiches. Feel free to toast the buns in the oven for extra crispness.
- Then, layer on the buns your Marmalade, arugula, Roast beef, cheese, and Fig Aioli. Enjoy!
Recipe notes:
*If you would prefer to use something else, other great options are Mild Provolone, Gruyere, or Gouda cheeses.
*You can buy a premade Caramelized Onion Marmalade if you are tight on time. Either way, you will have some left over. Do not use the whole batch unless you are cooking for a large crowd.
