Tips for using Puff Pastry

Puff Pastry can be a little intimidating at first, but once you get the hang of it you’ll never want to stop trying new recipes.

  1. Thaw in the fridge. Puff pastry is easier to work with when slightly cold (so it still doesn’t become too soft), so you’ll have better luck thawing in the fridge vs. on the counter.
  2. Chill again before baking. While your oven is preheating, place your puff pastry back into the fridge. This will help is really puff up while cooking.
  3. Be careful with the rolling pin. While you might need to roll out the puff pastry for certain recipes, be careful to not overwork it- this could result in a lack of puffiness.

Instructions:

  1. First, thaw the puff pastry at room temperature for 20-30 minutes, covering it with parchment paper (#1153) to prevent drying.
  2. Meanwhile, preheat oven to 400F.
  3. Then, place the stuffing in the center of the puff pastry square, followed by gravy, mashed potatoes, and turkey.
  4. Gently fold up the corners of the pastry sheet, and tie up with kitchen twine. Fold the corners down over the twine.
  5. Now, use a basting brush to brush the egg wash over the outside of the puff pastry.
  6. Bake for 20 minutes or until golden brown.
  7. Allow to cool slightly, and serve with cranberry sauce.
