Triple Berry No-Bake Cheesecake
Ingredients:
Crust:
- 1/2 cup Kirkland Salted Sweet Cream Butter (#1723), melted
- 1/3 cup C & H Brown Sugar (#2261)
- 2 cups graham crackers, finely crushed
Filling:
- 1 1/2 cups Wyman’s Triple Berry Blend (#1215), defrosted and lightly mashed
- 1 1/4 cups heavy cream, cold
- 3 8oz. blocks cream cheese, room temperature
- 1/2 cup C & H Granulated Sugar (#1632)
- 2 tsp lemon juice
- 2 tsp Blue Cattle Mexican Vanilla (#6702)
Instructions:
- First, thoroughly combine the crust ingredients. Then, press into the bottom of a 9in. springform pan. Set in the freezer while the filling is prepared.
- Then, whip the heavy cream until stiff peaks form.
- In another bowl, whip together the cream cheese and sugar until smooth. Then, mix in the lemon juice and vanilla. Gently fold the heavy cream into the cream cheese mixture.
- Next, spread half of the filling on top of the crust, followed by half of the berries, and carefully swirl the two together. Repeat with the remaining filling and berries, gently swirling again.
- Finally, place in the fridge for 6-24 hours before serving.
