Southwestern Breakfast Burritos

Ingredients:

Instructions:

  1. Mix together the beans, tomatoes, and cilantro then set aside.
  2. Heat the meatballs in the microwave for 2 minutes, stir around, then heat for 1 more minute.
  3. Then, spray a pan with Vegalene Garlic Mist. Add the beaten eggs and season with Regal Fine Sea Salt (#1146) and AP Table Grind Black Pepper (#1029) to make scrambled eggs.
  4. Meanwhile, heat the tortillas in another pan.
  5. Once all the tortillas are warmed, divide the egg mixture between them, placing it down the center of the tortilla. Then, top divide the black bean mixture, cheese, and meatballs between the tortillas. Roll them up burrito style, and serve with a lime wedge if desired.
