Baked Avocado and Eggs

Breakfast never looked so good! Our Baked Avocado and Eggs are topped with bacon and chives, creating a wonderful low carb breakfast. 

Avocado Boats 2 Ways:

  1. Pulled Pork Avocado Boats. You will need: 2 Hass Avocados, halved and pitted, 1/2 cups pulled pork (#6878) or chicken (#5513)– leftover is great!, 1/4 cup BBQ sauce, ranch (#1032). Warm the pulled pork, then mix with BBQ sauce. Evenly distribute between avocados. Drizzle with remaining BBQ sauce and ranch (optional). Eat as is or place into a preheated oven at 350 for 20 minutes. 
  2. Black Bean Topping. You will need: 4 avocados, halved and pitted, 15 oz can black beans, slightly drained, 1/2 tsp of cumin (#1442), garlic powder (#1021), and chili powder(#1014), fresh cilantro, 1/4 cup chopped onion (#5772), 3-4 tbsp salsa. First, mix spices with black beans and heat in a skillet for 10 minutes, until warm. To serve, top the avocados with black bean mixture, cilantro, and onion. Serve immediately.

Baked Avocado and Eggs

Ingredients:

Instructions:

  1. Preheat oven to 425.
  2. Cut the avocado in half and remove the pit.
  3. With a spoon, scoop out some of the avocado so it’s a little bit bigger than your egg and yolk. Place in a muffin pan to keep the avocado stable while cooking.
  4. Crack your egg and add it to the inside of your avocado. Sprinkle a little cheese on top with a pinch of salt and pepper. Top with cooked bacon.
  5. Cook for 14-16 minutes. Serve warm.
