Easy Pie Crust

- 1/2 box Krusteaz Pie Crust Mix
- 1 cup ice cold water
Instructions:
- Place mix in bowl. Using a paddle, gradually add water while mixing on low speed for 30 seconds or until dough ball forms.
- Allow dough to rest for 10 minutes.
- Scale dough and form into balls. Roll dough on lightly floured surface. Transfer dough to pie pans

Chocolate Silk Pie
Ingredients:
- 1 pie crust, prepared
Chocolate Potato Fudge Bottom
- 1/2 cup Idahoan Rustic Homestyle Mashed Potatoes (#1391), prepared & cooled
- 5 Tbsp Kirkland Sweet Cream Butter (#1723)
- 4 Tbsp Ghirardelli Unsweetened Cocoa Powder (#6282)
- 1 1/2 oz. unsweetened chocolate
- 1 cup C & H Granulated Sugar (#1632)
- 2 eggs
- 1/2 tsp Blue Cattle Mexican Vanilla Bean Paste (#6945)
- Pinch of Regal Fine Sea Salt (#1146)
Chocolate Cream Topping:
- 8 oz. cream cheese, room temperature
- 1/2 cup heavy cream
- 1 cup C & H Powdered Sugar (#1151)
- 1 tsp Blue Cattle Mexican Vanilla Bean Paste (#6945)
- 4 Tbsp Ghirardelli Unsweetened Cocoa Powder (#6282)
Instructions:
- First, preheat oven to 350F.
- Then, add the butter, cocoa powder, and unsweetened chocolate to a saucepan and melt over medium-low heat. Stir until fully incorporated, then remove from heat.
- Now, gently mix in the remaining ingredients until smooth and pour into the prepared pie crust.
- Bake for 20 minutes. Allow to cool completely.
- Meanwhile, mix together the chocolate cream topping in a bowl. Spread on top of the chocolate fudge layer, followed by Rich’s On Top Original Whipped Topping (#2413).
- Store in the fridge until ready to serve.
