Cilantro Lime Beef Taco Bowl

Prep lunches for the week in under 30 minutes. Simply prepare as explained below, but split into your favorite meal prep containers. Stack the rice taco meat on one side, with the avocado, lime wedges, and cilantro on the other. Then, when you’re ready to dig in, simply remove the avocado, lime wedges and cilantro and microwave until heated through. Add the rest of the toppings, and enjoy!

Instructions:

  1. First, prepare the rice by heating 2-4 Tbsp Avocado Oil (#3516) in a skillet on med-high heat. Sauté for 7 minutes, covered, stirring frequently. Remove from pan and set aside.
  2. Now, brown the meat, draining the excess fat. Add the taco seasoning, water and orange juice and cook until heated through.
  3. To assemble, add rice to a bowl, followed by taco meat, cheese, avocado and pice do gallo. Repeat until the fillings are used up, add any other desired toppings, and enjoy!
