Huevos Rancheros Breakfast Bowls

If you’re celebrating Cinco de Mayo or are just a fan of Mexican-inspired cuisine, Huevos Rancheros Breakfast Bowls are just what you need! The breakfast bowls are made with a black beans hash topped with bacon slices, a fried egg, pico de gallo then served with corn tortillas.

Instructions:

  1. First, cook the bacon until crisp in a frying pan. Remove from the bacon from the pan, then crack the eggs and cook to your liking. Season with salt and pepper.
  2. In another pan, melt the garlic butter. Add the hashbrowns, black beans, lime juice and spices. Saute until cooked, about 10-12 minutes.
  3. To serve, divide the potato mixture between four bowls. Top with an egg and serve with bacon, corn tortillas, and desired toppings.
