Instructions:

  1. First, remove the steak from the fridge and rub it with the steak rub. Allow to sit at room temperature for 30 minutes prior to cooking.
  2. Now, begin on the Chimichurri sauce by washing the cilantro leaves and parsley leaves before finely chopping the cilantro, parsley, and garlic.
  3. In a bowl, combine the chopped cilantro, parsley, and garlic to a bowl along with lemon juice, red wine vinegar, cayenne pepper, and cumin. Then add in avocado oil until mixture is well blended. Allow to sit at room temperature at least 15 minutes before serving.
  4. To cook the steak, preheat your grill to medium-high heat. Once heated, cook the steak 5-6 minutes on each side, or until the steak reaches medium-rare or desired doneness.
  5. Once the steak is done, remove from the grill and allow to rest for 5 minutes before slicing.
  6. Serve while the steak is warm, with chimichurri sauce drizzled over top.
