Summer BLT Dip

Calling all BLT fans! This potluck side is for you. Enjoy a cream cheese and sour cream base mixed with bacon, ranch dressing, tomatoes, cheese, and onion. You can serve it with chips, crackers, naan bread, toast, or even vegetables.

Ingredients:

Instructions:

  1. Cook bacon until evenly brown and crisp; blot well on paper towel. Chop into smaller, bite-size pieces.
  2. In a medium bowl, combine mayonnaise and sour cream. Stir in Rosie’s Ranch Dressing Mix. Fold bacon into the sour cream and mayonnaise mixture. Allow flavors to meld in the fridge for several hours or overnight.
  3. Mix in tomatoes, and other optional ingredients, just before serving.
  4. Garnish top with a few diced tomatoes and green onions.
  5. Serve with bread, chips, or crackers.
Cheese Tortellini Broccoli Salad

Who doesn’t love a good pasta salad? This tortellini salad features bacon, onion, dried cranberries and cheese-filled tortellini in a creamy balsamic sauce. You won’t go back to any other pasta salad recipe after this!

Ingredients:

Instructions:

  1. Bring a large pot of water to a boil and cook tortellini according to the package instructions. Rinse with cold water, drain well and set aside.
  2. Meanwhile, preheat oven to 375 degrees. Place bacon on a foil lined, rimmed baking sheet. Bake for 15-18 minutes until the bacon is brown and crisp. Transfer cooked bacon to paper towels; crumble and set aside.
  3. In a large serving bowl, combine the cooled tortellini, broccoli, onion, and dried cranberries. In a small bowl, stir together the mayonnaise, sour cream, balsamic vinegar, and sugar. Pour the dressing over the tortellini salad and toss until well mixed.
  4. Refrigerate for at least two hours or up to six. When ready to serve, stir in the crumbled bacon and chopped walnuts.

Mike’s Hot Honey Ribs

Enjoy pork ribs with a tangy, sweet and spicy Mike’s Hot Honey glaze baked to tender perfection. Finger lickin’ good!

What is hot honey?

Mike’s Hot Honey (#3087) is a new item in our catalogs, and boy are we glad we were introduced to it! This honey is made from 100% pure wildflower honey from American bees and infused with chilies to make an incomparable condiment. Add sweet heat to smoked meats, fried chicken and wings, sauces, baked beans, veggies, and more. It was originally crafted by a pizzeria for drizzling over pizza then sold by the bottle when it become so popular! Wondering how else to use it?

  • Drizzle it on pizza, fried chicken or BBQ. 
  • Pair with your favorite cheese and add to cocktails or tea.
  • Mix into dressings or marinades and even drizzle on ice cream!

Tips for the best ribs

  • To put it simply: low and slow is the way to go. As long as you follow this rule, you’ll get tender, tear off-the-bone ribs every time.
  • If you want extra tender ribs, add 1/4 cup of vinegar to the water. Not only does this help tenderize, it also adds more flavor.
  • For moist ribs: add more sauce, cover in foil, and allow to rest before serving.

Mike’s Hot Honey Ribs

Instructions:

  1. First, preheat oven to 350F. Put ribs in 6-8 quart pot and cover with water by 2 inches.
  2. Bring to boil, reduce heat and simmer uncovered, skimming froth, 30 minutes.
  3. Meanwhile, cook onion and garlic in oil over moderate heat, until onion is tender.
  4. Next, stir in remaining ingredients and simmer sauce for 15 minutes, stirring occasionally.
  5. Then, drain pork in colander and pat dry. Pour sauce over pork and cover dish tightly with foil. Cook for 1 hour. Then remove foil, turn pork over with tongs and cook, uncovered, until very tender, about 30 minutes. Skim fat from sauce if desired.
  6. Remove from oven and finish with a generous drizzle of Mike’s Hot Honey.

Chipotle Turkey Burger

Turkey burgers often get a bad rap, but we’re here to change your mind! These Chipotle Turkey Burgers are juicy, flavorful and have just enough heat to satisfy your craving for Southwestern fare.

  1. First, make the chipotle ranch by whisking 1 Tbsp of mix with 8 oz of mayonnaise. Chill for 30 minutes while you prepare the burgers.
  2. For the patties, gently combine the ground turkey, butter, chipotle powder, green onion, salt and pepper. Then, form into 4 patties, pressing an indent into the middle.
  3. Grill over medium high for about 5 minutes per side, or until the internal temperature reaches 165F. If desired, add a slice of cheese once flipped. Remove from grill and let rest.
  4. If desired, butter and grill the buns until golden brown.
  5. To assemble, place the cooked burger on the patty, topped with the sauce, lettuce, and any additional toppings you like. Enjoy!
Black Bean & Mushroom Burger

If you’re looking for a good vegetarian burger, this Black Bean & Mushroom Burger is a great option! Try making and freezing ahead of time and cooking on the grill!

  1. First, sautee the diced mushrooms, broccoli, red onion, and garlic in oil with the Rick’s 1 Spice. Season with salt and pepper if needed.
  2. Meanwhile, use a potato masher to mash half of the black beans. Some chunks are okay. Then, add in the remaining black beans, sauteed mixture, and Worcestershire sauce.
  3. Once combined, gently mix in the eggs, cheese and bread crumbs until thoroughly mixed.
  4. Before assembling the patties, heat oil in a skillet. Once the oil is heated, form a patty with about 1/2 cup of the mixture. Gently press the mixture together to form a patty.
  5. Next, place in the skillet and cook for 3-5 minutes per side, or until golden brown.
  6. Assemble with desired toppings, and enjoy!

*If you need it full vegetarian or vegan, use one that does not contain anchovies

Shrimp Spring Roll

Fresh spring rolls filled with black tiger shrimp, rice noodles, and crisp vegetables served with a delicious peanut sauce. It might seem like an intimidating recipe to create at home, but we promise it’s actually quite simple. And, the process might be relaxing to some. Our favorite part is the delightful dip and crunch once the prep work is done.

The most important step is making sure you soak the wrapper for the proper time. Just soak for 15 to 20 seconds in cool water, and magic will happen before your eyes! The wrapper will soften up to wrap up the delicious fillings. If your fingers are sticking to it, simply dip your fingers in water.

  1. Prepare the sauce by whisking together the peanut butter, hoisin sauce, fish sauce, minced garlic, sugar and water. Stir until smooth, adding more or less water as needed. Transfer to a serving bowl and top with chopped peanuts. Set aside until ready to use.
  2. For the spring rolls, bring a pot of water to a boil. Add the rice noodles and cook until tender, about 4 to 6 minutes. Strain with a colander, rinse with cold water and place in the fridge until ready to use.
  3. For the shrimp, add the mirin, soy sauce, and minced garlic to a skillet. Cook until the shrimp is pink, about 2 minutes. Remove from heat and stir in the sesame oil. Set aside. You can either refrigerate or add to the spring rolls warm, depending on preference.
  4. To assemble, fill a dish with cool water. Add a rice wrapper to the water for 15 to 20 seconds, then shake off the excess water and place on a cutting board. Lay a piece of lettuce on top, followed by noodles, carrots, and bean sprouts. Then, roll it up halfway, folding the sides in like an envelope. Add a couple pieces of shrimp, cilantro, and a couple pieces of chives. Continue to roll the wrapper until sealed.
  5. Repeat with remaining ingredients, placing on a serving tray seam side down. Serve immediately with the sauce. Enjoy!

One of our most-used frozen fruits is Wyman’s Wild Blueberries (#1218). Not only are they great quality, they are a nutrient-rich food packed with fiber, minerals and antioxidants. The only ingredient is wild blueberries, so we feel great feeding this to our family.

The newest recipe we have tried from Wyman’s is Wild Blueberry Scones. These tender scones have a burst of wild blueberries in every bite and are finished off with a simple lemon glaze. Whether serves as a breakfast, dessert, or afternoon snack – they’re perfect for a sweet fix.

  1. In a large bowl, whisk together the flour, sugar, baking powder and salt. Add the cubed butter. Using your fingers, work the butter into the flour until the mixture resembles coarse meal. Add the frozen berries and mix to combine.
  2. In a small bowl, whisk together the heavy cream, egg and vanilla. Now, add the cream to the flour mixture and mix just until moistened.
  3. Then, turn the dough out onto a lightly floured surface and shape into an 8-inch disc. Next, cut into 8 wedges. Transfer to a parchment-lined baking sheet allowing 2-inches between each scone. Refrigerate for 15 minutes.
  4. Meanwhile, preheat oven to 400°F. Bake chilled scones for 15-20 minutes or until lightly golden brown. Allow scones to cool 10 minutes before adding icing.
  5. In a small bowl, whisk together the powdered sugar and lemon juice. Drizzle over the cooled scones.

Sheet Pan Citrus Spatchcock Chicken & Root Vegetables

This easy one-pan meal features spatchcock chicken and roasted root vegetables smothered in citrus grill butter. A super flavorful recipe just waiting to be prepared for Father’s Day!

So, what is spatchcock chicken?

We know the name is weird- just think of it as butterflying a whole chicken. The process is just removing the spine of the chicken to flatten it out, allowing everything to cook at the same level. Not only does it result in deliciously crispy meat, but the skin gets nice and crispy.

Try grilling it!

If you’re preparing this for Father’s Day or just as a summer meal, chances are you won’t want the oven on. We don’t blame you! To grill, simply heat to medium-high heat. Brush the grates with oil, then place the prepared bird on with the skin side down. Cook for 5 minutes, or until the skin is crispy, then flip and grill for 45 minutes, or until the internal temperature reaches 165F. For the vegetables, use a grill mat or thread onto skewers. Cook until crisp and tender. Enjoy!

  1. First, preheat oven to 400F.
  2. Next, make a flavored butter by mixing the citrus grill seasoning, salt, and pepper into the melted butter. Set aside.
  3. Then, place the thawed chicken on a cutting board, breast side down. Using good quality kitchen shears, cut along one side of the spine to separate from the ribs. Repeat on the other side, and set the spine aside. Flip the bird over, and press down to flatten – it is normal to hear a crack.
  4. Now, carefully pull the skin away from the meat and spread about a third of the butter around. Then, spread a later of butter on the outer skin. Toss the vegetables in the remaining butter.
  5. Place the buttered chicken in the center of a Crestware Cookie Sheet (#4020), surrounded by the vegetables. Sprinkle on a few sprigs of time, then bake for 40 minutes, or until the internal temperature of the chicken reaches 165F.
  6. Allow to rest before serving. Enjoy!

S’mores are a classic summer treat, with gooey marshmallows, chocolate and a crispy graham cracker. But, we have found a couple delicious ways to rethink s’mores this summer. Enjoy two fun variations of this classic summer treat, with Naan Dippers and Chocolate Chip Brownie Brittle.

Buttery naan dippers broiled with a crispy marshmallow, topped with Hershey’s chocolate and graham cracker crumbles. No campfire is needed for this treat!

  1. First, turn the oven on to broil.
  2. Then, pan fry each dipper in the butter. Transfer to a Crestware Cookie Sheet (#4020), then place a marshmallow on top. Boil for 30 seconds, keeping a close eye so they don’t burn.
  3. Once toasted to your liking, remove the pan from the oven. Immediately press a Hershey’s square onto each marshmallow, followed by graham cracker crumbs.
  4. Allow to cool slightly before serving.

*Optional – toss in AP Cinnamon Vanilla French Toast Sugar (#1536) before broiling.
