Traditional fajitas are served in a tortilla (#4970), but change things up a bit with this recipe! Serve with grilled (or boiled) corn on the cob and an avocado and tomato salad for easy sides. You can also whip up a batch of easy Spanish Rice by using our Spanish Rice Seasoning (#2105).

Skewered Sirloin with Lime Cumin Sour Cream

Cook Time: 7 minutes
Makes 4 servings.

Skewered Sirloin with Lime Cumin Sour Cream

Ingredients:

  • 2 Tbsp lime juice
  • 3 tsp Fabulous Fajita Mix (#1017)
  • 1 1/4 pounds sirloin steak, trimmed and cut into 16 (1-inch) pieces
  • 1 each red bell pepper and yellow bell pepper, each cut in 16 pieces

Lime Cumin Sour Cream:

  • 1/3 cup fat-free sour cream
  • 1 1/2 Tbsp light mayonnaise
  • 1 Tbsp lime juice
  • 1/4 tsp AP Ground Cumin (#1442)
  • 1/8 tsp Ground Red Pepper

Instructions:

  1. Mix Sour Cream ingredients in small bowl until well blended. Cover. Refrigerate until ready to serve. 
  2. Mix 2 tablespoons lime juice and seasoning mix in large bowl. Add steak cubes; toss to coat well. 
  3. Alternately thread steak cubes and bell peppers onto skewers.
  4. Broil skewers on broiler pan coated with no stick cooking spray 5 to 7 minutes or until desired doneness, turning once. Serve with Sour Cream.
