Snowball Cookies with True Lemon

What makes Snowball Cookies so special?
Snowball Cookies, also known as Mexican Wedding Cookies or Russian Tea cakes, are a rich, buttery shortbread cookie. AKA delicious! They are a classic Christmas dessert and our Christmases aren’t complete without them! You can add nuts, if desired, but adding True Lemon really makes the flavor pop. Plus, you can freeze them to enjoy for about a month after Christmas, too.

Snowball Cookies with True Lemon
Ingredients:
- 1/2 cup Kirkland Butter (#1723), softened
- 2/3 cup C & H Granulated Sugar (#1632)
- 1 egg
- 8 packets True Lemon (#1689) dissolved in 1/4 cup water
- 1 tsp Blue Cattle Truck Mexican Vanilla (#6702)
- 1 3/4 Lehi Roller Mills Turkey Brand Flour (2285)
- 1/4 tsp each of Clabber Girl Baking Soda (#2848), cream of tartar, and Regal Sea Salt (#1146)
- C & H Confectioners Sugar (#1151)
Instructions:
- First, cream together the butter, sugar, and egg. Then, add True Lemon water and vanilla.
- In a separate bowl, combine the flour, baking soda, cream of tartar, and salt then add to butter mixture.
- Cover and refrigerate the dough for at least 1 hour.
- Next, preheat your oven to 350F.
- Remove the dough from the fridge and roll the dough into 1-inch balls. Then, place on a silicone mat (#8436) lined cookie sheet (#4020).
- Bake for 10-12 minutes or until the bottoms start to brown (the tops will not brown).
- Transfer immediately to cooling racks (#1145) and allow to cool before rolling in confectioners sugar.
