Of course! One easy way to change this recipe is to coat each sweet potato patty in a mixture of Panko Bread Crumbs (#1193) and Italian ‘n Pizza Seasoning (#1432) before frying to add a nice crunch. Sweet Potato Avocado Sliders
Ingredients:
- 2 lb. Bright Harvest Country Style Sweet Potato (#5968)
- 2 Tbsp BBF Naturally Refined Avocado Oil (#3516)
- 1 Tbsp AP Premium Garlic Powder (#1021)
- 1/2 tsp Regal Fine Sea Salt (#1146)
- 2 Tbsp Vegan Worcestershire Sauce
- 1 cup chickpeas, drained and rinsed
- 1 1/4 cup Honeyville Rolled Oats (#1068)
- 3/4 cup Kirkland Walnuts (#1293), crushed
- 3/4 cup flaxseed meal
- 1 tsp AP Mild Paprika (#1697)
- 1 Tbsp Silk Original Almond Milk (#1456)
- 2 Tbsp BBF Naturally Refined Coconut Oil (#8287)
- Mini slider buns
- Toppings: Avocado, additional Worcestershire sauce, onion, kale, mustard, and mayonnaise, for serving
Instructions:
- First, preheat oven to 375F.
- Then, coat sweet potatoes with olive oil, garlic powder, and salt. Spread onto a cookie sheet (#4020) lined with kirkland foil (#1963) and bake for 35-40 minutes, or until golden brown. Remove from oven and allow to slightly cool.
- Now, add to a food processor with the soy sauce and Worcestershire sauce. Then, add the onions and chickpeas and pulse until well mixed. Pulse until you reach a consistency of mashed potatoes.
- In a large bowl, combine the oats, walnuts, ground flaxseed, and paprika. Fold in the sweet potato mixture, then mix in the almond milk.
- Measure the mixture with a 1/3 measuring cup, and form a patty with your hands. If desired, coat each patty in a mixture of Panko Bread Crumbs (#1193) and Italian ‘n Pizza Seasoning (#1432) before frying.
- Meanwhile, heat the coconut oil in a pan. Add the patties and saute until each side is golden brown, about 4 minutes per side.
- Serve on buns with toppings of your choice. Enjoy!
