Skillet Gnocchi with Tomatoes, Spinach & Parmesan

With the school year starting soon, we’re thinking ahead to busy nights when extracurricular activities start. We don’t always have more than 30 minutes to spend on dinner, so when we realized this skillet dish was ready in under 15 minutes…we knew it would frequent our menu rotations. With buttery, crispy pan-fried gnocchi, cherry tomatoes, and spinach topped with shaved parmesan, this refreshing meal will become a family favorite for you too.

Cooking methods for gnocchi

No matter how you cook gnocchi, it doesn’t take long. Here are a few methods we have tried:

  1. Boil. For pillowy soft dumplings, bring a pot of salted water to a boil and cook until the gnocchi floats. Drain.
  2. Pan fry. Add a generous amount of butter and cook until the gnocchi is golden brown for a crisp exterior and soft interior.
  3. Bake. Arrange on a cookie sheet in an even layer and spray with Vegalene (#1212). Bake for 20 minutes, or until golden brown and crisp, stirring halfway through.

Buttery, crisp pan-fried gnocchi, cherry tomatoes, and spinach topped with shaved parmesan.

Skillet Gnocchi with Tomatoes, Spinach & Parmesan

Ingredients:

Instructions:

  1. Melt the butter in a large skillet. Add thawed gnocchi and cook on high heat, stirring frequently for about 4 minutes. Continuously spread gnocchi evenly in the pan for crisp texture on both sides. At the same time, heat the oil in another large skillet over medium-high heat.
  2. Add the garlic and cook until fragrant and golden, 1-2 minutes. Add the tomatoes and cook, stirring, until the tomatoes wilt and begin to release their water, 3-4 minutes. Add the baby spinach, season with salt and pepper, stir and add the gnocchi.
  3. Toss to combine and cook for 1 more minute on high heat. Season with more salt and pepper to taste. Divide among plates, garnish with Parmesan shavings and serve.

No-Fuss Valentine’s Day Dinner

Instructions:

  1. First, prepare the sweet potatoes. Preheat oven to 400F. Then, wash and wrap tightly in Kirkland Premium Quality Foil (#1963) and bake at for about an hour (depending on size of potatoes). Serve with Chef Shamy Cinnamon Honey Butter. They are SO GOOD!
  2. Then, preheat air fryer to 400F. Then, rub steaks with avocado oil on both sides and sprinkle with montreal steak seasoning. Place steaks in air fryer and cook for 12 minutes, turning halfway through. Remove steak from air fryer, let rest for 10 minutes, and serve with a pat of garlic butter.
  3. Meanwhile, prepare the shrimp by by spooning garlic butter onto Crestware Baking Sheet (#4020) lined with Kirkland Premium Quality Foil (#1963). Place in the oven to melt as oven it preheats to 400F. Watch and remove baking sheet when the butter is fully melted, but not browned. Place thawed shrimp on baking sheet, dipping in butter and flipping so both sides are coated. Put pan back in the oven and bake for about 8-10 minutes, turning shrimp halfway through. Remove from oven, and serve immediately.

  3. Now, add yakisoba noodles, green onion, soy sauce, sesame oil, salt and pepper to the pan. Cook until heated through.
  4. Next, add the chicken and vegetables back to the pan. Stir to combine. Enjoy!

  2. Then, cook the noodles by blanching in boiling water for 1 minute. Strain and set aside.
  3. Now, heat a pan with half of the oil. Add the steak and saute until browned on all sides, approx. 3-4 minutes (This might be easier to do in two batches).
  4. Once the meat is browned, add the broccoli and 2 Tbsp of water, cooking until tender (approx. 6 minutes).
  5. Next, stir in the teriyaki sauce and noodles and mix until evenly coated in the sauce.
  6. Garnish with sesame seeds. Enjoy!
