Thai Coconut Chili Chicken Skewers

Can these be made ahead of time?

If you’re wanting to speed dinner up, try pre-cutting your chicken- or use our diced chicken (#7787) to skip a step. In addition, you can marinade the chicken in a bowl or Ziploc bag (#1979) overnight so soak up extra flavor. If you choose to add any veggies to these skewers, like onions or peppers, pre-cut those as well. Next, when you are ready to get going, make sure you soak your bamboo skewers for at least 30 minutes prior to assembly. Once those are soaked, assemble your skewers with the pre-cut chicken and veggies, grill, and enjoy!

Thai Coconut Chili Chicken Skewers

Instructions:

  1. First, in a large bowl, whisk together coconut milk, cumin, coriander, brown sugar, garlic powder, chili flakes, shallots, curry powder, soy sauce, ginger, lime juice and zest, salt, and pepper (if using) until smooth.
  2. Next, transfer mixture to a large Ziploc bag (#1979) and add cubed chicken. Seal bag and refrigerate for 2-4 hours, or overnight.
  3. Then, once the chicken is done marinading, thread it onto skewers and set remaining marinade aside.
  4. Heat your grill or griddle to medium-high heat and cook skewers, rotating frequently and brushing with marinade, until completely cooked through.
  5. Transfer skewers to serving plates, garnish with fresh cilantro and serve immediately!
