Spicy Garlic Shrimp and Quinoa

How long will this recipe stay good?

Thankfully, if you don’t lick your bowls with this recipe- it will last in the fridge for up to 3 to 5 days. Simply store in an airtight container, and reheat when you’re ready to dig in again. We do recommend that you only keep shrimp in the fridge for 3 to 4 days, so be aware of that too.

Spicy Garlic Shrimp and Quinoa

Ingredients:

You will also need:

  • fresh parsley finely chopped
  • juice of half lemon

Instructions:

  1. To begin, rinse the quinoa in a strainer under cold running water.
  2. Next, heat the avocado oil in a large pot over medium heat.
  3. Once the pan is heated, add the onion and minced garlic and cook, stirring occasionally, until the onion softens slightly.
  4. Add the quinoa and ½ teaspoon of chili powder and sprinkle with salt and pepper as desired.
  5. Sautee for 1 minute with onion and garlic then add the broth.
  6. Bring to a boil uncovered. Once it begins to boil, reduce the heat to low, cover, and simmer for 20 minutes, or until the water is absorbed and the quinoa is cooked. Remove from heat, and mix in the the parsley.
  7. While your quinoa is cooking, prepare the shrimp. Heat ½ tablespoon of avocado oil in a large skillet over medium-high heat. Once the pan is heated up, add the shrimp with ¼ teaspoon of chili powder. Season with salt and pepper as desired, and saute until cooked through. Next, add the garlic and cook until fragrant.
  8. Mix the quinoa and shrimp together, top with lemon juice and fresh chopped parsley. Enjoy!
