Sweet Potato-Bacon Breakfast Tacos
Sweet Potato-Bacon Breakfast Tacos are great as meal prep, or to serve on the weekends. These flavorful tacos have a nice crunch from the Whisps Crisps which pair nicely with the soft sweet potatoes. We love having the ingredients on hand for an easy breakfast (or dinner!).
Meal Prep Tacos:
These tacos are great to prep at the beginning of a busy week. Simply prepare the sweet potatoes and bacon as desired, and store in airtight containers. You can also add other veggies like our Baja Blend (#5353) or poblano peppers. Once prepared, separate into dishes for each morning. When ready to serve, reheat the prepped veggies, throw it into a corn tortilla, add a scrambled egg, whisps, avocados, salsa, and any other desired toppings. Breakfast is served!

Sweet Potato-Bacon Breakfast Tacos
Ingredients:
- 2 cups Bright Harvest Country Style Sweet Potato (#5968)
- 1 Tbsp preferred vegetable oil
- 1 Tbsp AP Chili Powder (#1014)
- 1½ tsp Regal Fine Sea Salt (#1146), divided
- 8 slices Daily’s Applewood Smoked Thick Sliced Bacon (#8464)
- 1 medium red onion, thinly sliced
- 1 cup apple cider vinegar
- 4 large eggs
- 4 corn tortillas, warmed
- 1 1/4 cup Simplot Avocado Dices (#1645)
- 1 cup Asiago Pepper Jack WhispsⓇ (#1747), roughly crushed
Instructions:
- Preheat oven to 425F.
- Then, toss sweet potatoes, oil, chili powder, and 1/2 tsp salt on a large baking sheet (#4020). Roast for about 20 minutes, or until slightly browned and tender.
- While those are roasting, cook the bacon in a nonstick skillet until crispy then transfer to a paper towel-lined plate. Keep enough grease to coat the pan*, and discard the rest. Once the bacon is cooled, roughly crumble it. *This pan will be used again for the eggs.
- Now, combine the onion, vinegar, and 1/2 tsp salt in a saucepan and bring to a boil. Simmer for 3 minutes, then transfer immediately to a bowl and stir in 4 ice cubes.
- Next, reheat the skillet used for the bacon and crack the eggs into the pan. Cook until the desired doneness.
- Then, top each tortilla with sweet potatoes, bacon, pickled onion, avocado dices, and whisps. Serve immediately.
