Cajun Chicken in Foil
Spice up your next camping trip with this delicious, zesty, and savory Cajun Chicken in Foil with an easy homemade Cajun Seasoning Blend.
Homemade Cajun Seasoning:
If you don’t have Cajun Seasoning on hand, try making your own with ingredients you likely already have using our Restaurant-Quality Spice Blends. Be sure you don’t use the whole blend in one meal, or the flavor will be way too overpowering and ruin the dish. Simply mix together the following ingredients, and use 1-2 tsp for the recipe:
- 3 Tbsp paprika (#1697)
- 2Â Tbsp salt (#1147)
- 2 Tbsp garlic powder (#1021)
- 1 Tbsp ground black pepper (#1029), ground white pepper (#1524), onion powder (#1027), dried oregano (#1445), and cayenne (#1620)
- 1/2 Tbsp dried thyme (#1444)
How to cook this meal over a campfire:
Simply prepare your foil packets as described below. Place foil packets over hot coals, and cook over the coals until the chicken is opaque and the veggies are tender about 40 minutes. Try using our Charcoal Lighter Basket (#1665) to speed things up.

Cajun Chicken in Foil
Ingredients:
- 1 1/2 pounds boneless, skinless chicken breasts (#6519), cut into 1 inch cubes
- 1 medium zucchini, sliced
- 1-2 cups Green & Red Bell Peppers (#6386)
- 1/2 cup chopped onion (#5772)
- 4-6 Corn Cobbettes (#4655), cut into 1 inch pieces
- 2 Tbsp butter, cut into small pieces
- 1-2 tsp Homemade Cajun Blend (see above)
Instructions:
- Tear off 3 pieces of about 1 foot of aluminum foil (#1963).
- Add vegetables, chicken, pieces of butter and garlic powder onto aluminum foil.
- Wrap up sides of foil into a closed packet. Grill for about 10 minutes on each side until chicken is cooked through.
- Top with additional hot sauce as desired. Enjoy!
