What are the health benefits of shrimp?

Other than being full of protein and low in calories, shrimp provides a variety of other nutrients including vitamin B12, Selenium, Zinc, and Magnesium. Eating shrimp may also help with brain health because it contains omega-3 fatty acids along with other brain healthy minerals. Unfortunately, shellfish are a common allergy in the US. But, if you aren’t allergic, then shrimp is a great addiction to fit into a well balanced, healthy diet.

How can I cook this over a campfire?

Foil packet meals are extremely popular for camping because they don’t require any dishes, and they can be prepared before you leave. To cook, simply place your Lemon Garlic Herb Shrimp Foil Packet over hot coals. To get the correct temperature, have an open fire going for 2 hours. You can also heat your coals with our Charcoal Lighter Baskets (#1665). Place the foil packets directly on the coals, and flip after about five to ten minutes. Cook another five minutes, or until all the shrimp have turned pink and are cooked through.

Lemon Garlic Herb Shrimp Foil Packets

Ingredients:

Instructions:

  1.  First, preheat your oven to 425°F. Place shrimp in a large bowl; add oil, garlic, lemon, honey, chili pepper flakes, mustard, and cilantro. Add tomatoes and zucchini, toss to coat well and let rest for about 15 to 30 minutes.
  2. Next, tear off four 16-inch sheets of foil (#1963) and place over a rimmed baking sheet (#4020), one foil at a time. Using a spoon, add 1/4 of the shrimp and veggies mixture in the middle of a piece of the foil. Top with a tablespoon of the marinade from the bottom of the bowl and place a pat of butter on top.
  3. Then, seal the foil packet by folding over one end to meet the corners of the other; continue to tightly fold the open edge to form a seal. Repeat the process with remaining foil packets. Arrange on the baking sheet and bake for 15-20 minutes.
  4. Remove from oven and let rest 5 minutes before opening the packets. Be careful of the hot steam! Serve over pasta, rice, or as is with a slice of bread. Enjoy!
