Cauliflower Fried “Rice”
Ingredients:
- 2 Tbsp Kirkland Butter (#1723), BBF Coconut Oil (#8287), or BBF Avocado Oil (#3516)
- 12 ounces Flav-R-Pac Riced Cauliflower (#2743)
- 1/4 cup carrot, diced
- 2-3 Tbsp SupHerb Farms Fresh Frozen Green Onion (#1864)
- 2-3 tsp Kirkland Minced Garlic (#1289)
- 1 large egg
- 2 Tbsp soy sauce (if GF, check label or use coconut aminos)
- 1 tsp sesame oil
Instructions:
- Melt butter or oil in a large heavy skillet or wok over medium-high heat.
- Add carrots and riced cauliflower. Cook, stirring occasionally until vegetables begin to soften-about 5 minutes. Stir in the green onions.
- Cook until vegetables are almost tender about 2-3 minutes more. Add the garlic and cook for 1 minute.
- Pour in the egg and stir it together with the vegetables. Cook, stirring the mixture frequently until the egg is scrambled. This takes about 1-2 minutes. Stir in the soy sauce and the sesame oil. Taste and adjust seasoning.
