Can these be made ahead?

The short answer is yes, they can be made ahead. But, for the best quality breakfast, we suggest making these cornmeal waffles and serving immediately. If you are short on time, you will be okay to make the batter ahead of time.

Is this breakfast gluten free?

With just a simple change of flour, this meal is gluten free! Simply swap out the flour for our Bob’s Red Mill 1 to 1 Baking Flour (#1633). As long as you are using trusted brands, everything else is safe.

Cheddar Sausage Cornmeal Waffles

Ingredients:

Instructions:

  1. Preheat waffle iron. 
  2. In large mixing bowl whisk together flour, cornmeal, baking soda, smoked paprika, baking powder and chipotle chile powder. 
  3. In another bowl whisk together buttermilk, maple syrup, olive oil and sriracha. 
  4. Pour buttermilk mixture into flour mixture and stir to combine. Stir in diced sausage and shredded cheese. 
  5. Spray waffle iron with nonstick spray and cook waffles according to waffle iron directions. 
  6. Top warm waffles with fried eggs and drizzle of sriracha.
