What is a Dutch Baby?

A Dutch Baby, sometimes called a German Pancake, is mix between a fluffy pancake and a crepe. It is traditionally cooked in a skillet, and while it cooks the batter begins to rise and puff up. Once it cools, the puff collapses into the pan resulting in a delicious pancake with crisp, buttery edges. Plus, when you add berries, you get a delightful pop of flavor.

Berry-Filled Dutch Baby For One

Ingredients:

Instructions:

  1. First, heat the oven to 400 degrees F (200 degrees C).
  2. Put the butter in a 7-inch skillet (#1128) or an oven safe dish of similar size and place in the oven.
  3. In a small bowl, whisk together (or use a blender) the egg, milk, vanilla, and sugar.
  4. Then, add in the flour and a pinch of salt and whisk vigorously to remove the lumps.
  5. Carefully remove the hot skillet from the oven, making sure the butter is melted. Swirl the butter around the skillet to coat completely. 
  6. Next, add the blueberries to the skillet and pour the batter over the berries.
  7. Cook until the pancake is puffed in the center and golden brown along the edges, 20-25 minutes.
  8. Using a spatula, remove the entire Dutch Baby from the skillet and place on a cooling rack or a plate. Dust with confectioners’ sugar when cooled slightly and top with additional berries, if desired.
