Jamaican Ribs
Ingredients:
- Fire Braised St. Louis Style Pork Ribs (#1737)
- 2-3 Tbsp Jamaican Jerk Seasoning (#1724)
- Salt (#1146) and pepper (#1029), to taste
Mango BBQ Sauce
- 1 1/2-2 cups Wyman’s Mango Chunks (#2655)
- 1/2 medium red onion, peeled and cubed
- 2 tsp minced garlic (#1289)
- 1 1/2 cup ketchup
- 3 Tbsp Worcestershire sauce
- 2 Tbsp apple cider vinegar
- 1/2 tsp salt (#1146)
- 2 tsp chili powder (#1014)
Instructions:
- Thaw the ribs in the fridge over night.
- The next day, preheat the oven to 350F.
- On a foil-lined baking sheet (#5957), season the ribs with Jamaican Jerk Seasoning. Allow the ribs to sit for at least 10-30 minutes to absorb all the flavor and slightly thaw. Then, cover with tin foil (#1963) and place in the oven until heated through, about 10-15 minutes.
- *Ovens may vary. Check occasionally to see if they are heated through.
- While the ribs are in the oven, make the Mango BBQ Sauce. First puree the onion, garlic, and mango until smooth. Transfer to a saucepan with the remaining ingredients and stir until well combined. Then, cook over medium heat for 10-15 minutes, stirring occasionally. Once done, remove from heat and store in the fridge until ready to use.
- Before serving, remove the ribs from the oven and baste with 1/2-1 cup of the prepared Mango BBQ Sauce. Return to the oven and broil for 5 minutes, or until the sauce begins to carmelize. Reserve some sauce to serve on the side. Enjoy!
