Mashed Breakfast Potato Skins
Ingredients:
- 2 Lamb Weston Rusettes Baked Potato Skins (#2504)
- 1 cup Lamb Weston Roasted Garlic Mashed Potatoes (#7944), thawed
- 2 eggs
- 2 Tbsp Daily’s Regular Slab Precooked Bacon (#4835), chopped
- 1 Tbsp parsley, chopped
- Pinch of AP Mild Paprika (#1697)
Instructions:
- First, prepare the potato skins. Preheat oven to 400°F. Then, arrange frozen product in a single layer on a baking sheet lined with aluminum foil or parchment paper. Bake for 20-25 minutes, turning product halfway through baking time.
- Meanwhile, poach 2 eggs. Click here for easy instructions.
- Then, heat the mashed potatoes in the microwave.  Â
- To assemble, divide the mashed potatoes between the two skins and top with crumbled bacon. Carefully set a poached egg on top, followed by the paprika and parsley. Enjoy!
