These Pork & Vegetable Foil Packets (or skewers) are great for a no-hassle dinner. They are great for a campfire dinner, at home or in the mountains. We love a good versatile recipe, and this does not disappoint. Try cooking this on the grill or over a campfire for a nice smokey flavor.

What other spice blends can I use?

Can I cook these over a campfire?

Absolutely! If you choose to have this meal while camping, simply make sure everything is precut and ready to go ahead of time, and throw into a foil packet. Be sure to add butter or extra oil to ensure nothing sticks to the foil, plus a little extra flavor won’t hurt. Store in a cooler until you are ready to eat. To cook, place of a hotbed of campfire coals (use our charcoal light basket #1665) for approximately 30 minutes, turning halfway through.

Instructions:

  1. If using the oven, preheat to 400F. If using wooden skewers for roasting the kebabs in the oven, soak them in water while preparing the ingredients.
  2. First, dice the loin filet into 1 inch cubes. Try to keep the cubes small and consistent in size, so they cook quickly. Toss with Applewood Seasoning Rub.
  3. Then, combine all the diced vegetables in a large bowl and toss them with avocado oil, salt, and pepper.
  4. Assemble the kebabs by alternating between the diced pork, various vegetables, and pineapple pieces (#8277).
  5. Next, roast or grill the kebabs for about 15-20 minutes, or until the pork is fully cooked to an internal temperature of 170F. Remove from heat, allow to cool 5 minutes before serving, and garnish with diced scallions.
