Sheet Pan Cyclops Toast
There are many names for this breakfast, Eggs in a Hole, Cowboy Breakfast, One-Eyed Jack, etc. Whatever you call it, it’s a family favorite! With buttered bread and an egg in the middle, Sheet Pan Cyclops Toast is an easy and kid-friendly breakfast- especially when using the Sheet Pan method compared to frying it in a pan. For different holidays, use a holiday-themed cookie cutter for the center. An easy way to make this recipe work year-round!
How else can I cook this?
Most people simply cook this breakfast in a skillet. Simply place the buttered toast into a pan, crack the egg, and cook until the egg white is almost cooked through. Then, carefully flip the bread, or cover it with a lid until the egg is cooked to desired doneness. Personally, we like to flip it so both sides of the bread are toasted to buttery perfection!

Sheet Pan Cyclops Toast
Ingredients:
- 6 slices Rocky Mountain Bread Co. White Bread (#1336)
- 3 Tbsp Chef Shamy Garlic Butter (#8124)
- 6 eggs
- 6 Tbsp shredded parmesan cheese
- Regal Fine Sea Salt (#1146) and AP Table Grind Black Pepper (#1029), to taste
- 2 Tbsp fresh chopped chvies
Instructions:
- First, preheat oven to 400F. Line a baking sheet (#4020) with a silicone mat (#8436).
- Then, using a glass cup or circle cookie cutter, make a hole in the center of each slice of bread. Generously butter the bread and holes with Garlic Butter, then place onto the prepared cookie sheet.
- Next, carefully crack an egg into each of the holes, the sprinkle with parmesan cheese and salt and pepper.
- Now, bake for 3-6 minutes, or until the yolk is done to your liking.
- Remove from the oven and garnish with chives. Enjoy!
