Sheet Pan Meatball, Gnocchi and Veggie Bake
We love dinners that are ready in a flash, and it’s a bonus if there’s little mess to clean up! This is just one reason why sheet pan meals frequently make an appearance on our menus. This Sheet Pan Meatball, Gnocchi and Veggie Bake is a one-pan meal with Italian style meatballs, gnocchi, fajita blend vegetables, mushrooms, and zucchini topped with marinara sauce and mozzarella. Topped off with fresh basil, and it’s a winner!
Can I air fry this?
Yes! Although, if you do a full recipe, you’ll likely need to do it in batches.
Line the air fryer basket with Medallion Interfolded Foil Sheet (#2351). Then, heat your air fryer to 385F. Toss the gnocchi, meatballs, and vegetables in BBF Avocado Oil (#3516). Place in the air fryer basket and add dollops of marinara sauce. Cook for 8-12 minutes, or until the meatballs are cooked through and vegetables are tender. Add the mozzarella, and cook an additional 2-5 minutes, or until the cheese is melted. Enjoy!

Sheet Pan Meatball, Gnocchi and Veggie Bake
Ingredients:
- 1/2 bag Rana Meals Solutions Potato Gnocchi (#2754)
- 1/2 bag Rosina Italian Style Meatballs (#9142)
- 2 1/2-3 cups Flav-R-Pac Fajita Blend (#2069)
- 3.4 oz. container mushrooms, sliced
- 1 zucchini, sliced
- 1 1/2 cup marinara sauce
- 8 oz. fresh mozzarella, cubed
- For garnish, fresh basil, crushed red pepper flakes, and grated parmesan cheese
Instructions:
- First, preheat oven to 425F.
- Then, line a Crestware Cookie Sheet (#4020) with Kirkland Premium Quality Foodservice Foil (#1963).
- Now, spread the gnocchi, meatballs, and vegetables on the sheet. Then, add dollops of marinara sauce throughout the pan.
- Next, bake for 20 minutes, stirring halfway. Then, spread the mozzarella throughout and place back in the oven until the cheese is melted, about 5 minutes.
- Remove from the oven and garnish with fresh basil, crushed red pepper flakes, or freshly grated parmesan cheese. Enjoy!
