Slow Cooker Pork Carnitas Tacos
Ingredients:
- 3 lb. (1 case) Main St Pork Cubes (#1756)
- 1 cup chicken broth (#1038 base)
- 1 cup Flav-R-Pac Chopped Onion (#5772)
- 3-5 tsp Kirkland Minced Garlic (#1289)
- 2 Tbsp lime juice
- 2 1/2 tsp Mucho! Mexican Seasoning Mix (#2816)
- 2 bay leaves (#1753)
- 1 orange
- Salt (#1146) and pepper (#1029), to taste
- Corn Tortillas
- Optional toppings: cilantro, lime juice, shredded cheese (#1866), avocado dices (#1645), chopped onions (#5772), salsa, guacamole (#9247), or sour cream.
Instructions:
- To begin, line your slow cooker with a PanSaver Slow Cooker Liner (#1089).
- Then, place the pork cubes, chicken broth, onion, garlic, lime juice, Mucho! Mexican Seasoning, and bay leaves in your crock pot. Add the juice of one orange to the mixture, then the orange peels (for flavor). Add a generous amount of pepper and cook on low for 8 to 10 hours, or high for 4 to 5 hours.
- Once the pork is tender and cooked, remove from the crockpot to a cutting board. Discard the onion, bay leaves, orange peels, and any other remaining solids from the liquid in the crock pot.
- Now, pour the strained liquid into a pot and simmer for 10 to 15 minutes to reduce to about 1-1 1/2 cups. Meanwhile, preheat the broiler and remove any fat from the pork.
- Next, add the reduced sauce with the pork chunks. Add salt and pepper to taste, then spread the pork on a foil (#1963) lined baking sheet (#5957) and broil for 5 to 10 minutes, or until crispy.
- Heat up the corn tortillas as desired, then prepare the tacos with toppings of your choice (see above for ideas). Enjoy!
