Caprese Stuffed Chicken
Caprese Stuffed Chicken is a great recipe for fresh basil and tomatoes from your garden. You can easily substitute with sundried tomatoes and pesto, too. Enjoy flavor-packed chicken, coated in Italian seasoning then stuffed with mozzarella cheese and garden-fresh tomatoes and basil.

Caprese Stuffed Chicken
Ingredients:
- 4 Sun-Land Boneless Skinless Chicken Breast (#5513), thawed
- 1 Tbsp BBF Avocado Oil (#3516)
- Regal Coarse Sea Salt (#1147) and AP Coarse Black Pepper (#1028), to taste
- 2 tsp AP Italian ‘N Pizza Seasoning (#1432)
- 2 tomatoes, thinly sliced
- 1 lb. fresh mozzarella, thinly sliced
- 1 cup basil leaves
- 4 tsp Kirkland Minced Garlic (#1289)
- Shredded parmesan, to top
Instructions:
- First, preheat oven to 350F.
- Now, cut each chicken breast in half, leaving about 1/4 connected. Drizzle with olive oil, and season generously with salt, pepper, and italian seasoning.
- Then, fill the chicken breast with 1-2 slices tomato, 1-2 slices mozzarella, and basil leaves. Use a few toothpicks to seal it shut, and place into a baking dish.
- Bake for 15 minutes, then top with parmesan and bake an additional 10-15 minutes or until the chicken is cooked through. For crispier parmesan, broil for a few minutes before removing from the oven.
- Once the internal temperature reaches 165F, remove from the oven and allow to rest for a few minutes before cutting into it.
- If desired, drizzle with balsamic glaze before serving.
