Cranberry Orange Chicken

This can easily turn into a whole meal by adding rice to the dish. To do this, simply add 1 1/2 cups rice (or riced cauliflower #2743) + 1 1/2 cups chicken broth (#1038) + 1 1/4 cup HOT water to the baking dish. Continue with steps 3-5 below.

Cranberry Orange Chicken
Ingredients:
- 4-5 Kirkland Chicken Thighs (#1317) or Sun-Land Chicken Breasts (#5513)
- 1/2 cup Wyman’s Cranberries (#1220)
- 1 Tbsp Busy Bee Clover Honey (#1148)
- 1 Tbsp BBF Avocado Oil (#3516)
Marinade:
- 1/4 cup Wyman’s Cranberries (#1220)
- 1 Tbsp C & H Brown Sugar (#1150)
- 2 Tbsp BBF Avocado Oil (#3516)
- 2 Tbsp Busy Bee Clover Honey (#1148)
- 1 Tbsp Carello Balsamic Vinegar (#1057)
- 2 tsp Kirkland Minced Garlic (#1289)
- 1 large orange, zested and juiced
- 1/4 tsp Regal Fine Sea Salt (#1146)
- 1/8 tsp AP Table Grind Black Pepper (#1029)
Instructions:
- First, add the marinade ingredients to a food processor and blend until smooth.
- Then, pour the mixture into a gallon Ziploc bag (#1979) and add the chicken. Allow to marinate for at least 1 hour or over night for more flavor.
- When ready to bake, preheat oven to 375F.
- Place the chicken into a lightly greased baking pan, and pour the marinade over top. Then, add the remaining cranberries to the pan, along with orange slices and heads of garlic (if you want more garlic, simply slice the tops off of 2-3 heads of garlic to allow more flavor).
- Bake the chicken for 25-30 minutes. Next, mix one tablespoon of honey with one tablespoon avocado oil, and brush over the chicken. Broil for 2-3 minutes, or until the skin is crispy. Watch closely so it doesn’t burn.
- If desired, garnish with orange zest and fresh cranberries. Discard the sauce and serve.
