Eggo Breakfast Sandwich
Crispy Eggo homestyle waffles topped with melted cheese, crispy bacon and scrambled eggs for a quick, delicious breakfast. Everyone will be saying, “leggo my eggo!” after they try this.
Change it up with these variations:
- Enjoy it Chicken & Waffle style! Swap the cheese and bacon with Pierce Homestyle Chicken Tender Fritters (#6219) and Log Cabin Syrup (#6219).
- For a heartier meal, carefully press thawed Simplot Avocado Dices (#1645) onto one of the waffles.
- Swap the bacon with Daily’s Fully Cooked Pork Sausage Patties (#4063) or Smithfield Smoked Canadian Bacon (#2744).
Can these be frozen?
Absolutely! If you are freezing them, we suggest making egg patties (rather than scrambled). Simply wrap each sandwich in Western Plastics Foodservice Film (#6127) then place into a Ziploc Gallon Freezer Bag (#1979). To reheat, either thaw in the fridge overnight or pull it out of the bag broil for 4-5 minutes or until crispy.

Eggo Breakfast Sandwich
Ingredients:
- 4 slices Cloverdale Applewood Smoked Bacon (#2879) or Daily’s Precooked Deep Applewood Smoked Bacon (#9137)
- 2 Kellogg’s Eggo Homestyle Waffles (#1498)
- 1-2 eggs
- Regal Fine Sea Salt (#1146) and AP Table Grind Black Pepper (#1029), to taste
- 1 Tbsp Kirkland Salted Sweet Cream Butter (#1723)
- 2 slices of cheddar cheese
Instructions:
- First, cook the bacon in a frying pan until done to your liking. Drain on a paper towel and set aside, reserving some of the bacon grease.
- Add butter as needed, and crack the egg into the pan with the bacon grease. Cook to your liking – scrambled or fried. Season with salt and pepper.
- Meanwhile, slide two Eggo waffles into a toaster and cook until golden brown and crispy.
- To assemble, top one warm waffle with the cheese, bacon, and egg, and the second waffle. Enjoy!
