Amish-Style Baked Apple Berry Oatmeal

With a dish of baked oatmeal, you’ll have breakfast ready for the week! This recipe is loaded with great ingredients like oats, nuts, blueberries and apples. Unlike stove-top oats, baked oatmeal has more of a breadlike consistency. You can dress it up with a little milk or cream, or even a scoop of yogurt for a parfait style dish.

Instructions:

  1. Lightly spray an 8X12” or 9X13” baking pan Vegalene Spray (#1212) and set aside.
  2. Preheat the oven to 325 degrees F.
  3. In a large bowl, whisk together the oats, baking powder, cinnamon, nutmeg, salt and brown sugar (if using maple syrup instead of sugar, combine with liquid ingredients).
  4. In a separate bowl, whisk together the milk, eggs, and vanilla. Pour over the dry ingredients and add the melted butter. Whisk to combine.
  5. Arrange the fruit evenly over the bottom of the baking dish and pour the oatmeal mixture over the top.
  6. Bake for 35-45 minutes until the top is golden and the mixture is set (not very jiggly).
  7. Serve warm, with a little milk or cream, if desired.
