Mini Eclair Pumpkin Pie Jar
A no-bake treat with our favorite fall flavors! Serve Pumpkin Pie Jars layered with eclairs, Rich’s On Top, and a simple pumpkin filling for a fun Thanksgiving dessert. Store in the fridge until you are ready to serve.

Pumpkin Pie Jars layered with eclairs, Rich’s On Top, and a simple pumpkin filling for a fun Thanksgiving dessert.
Mini Eclair Pumpkin Pie Jar
Ingredients:
- Delizza Belgian Custard Cream Mini Eclairs (#1351), room temperature
- 15 oz. can pumpkin pie filling
- 5 oz. Jell-O Vanilla Instant Pudding Mix (#1914)
- 1/2 cup milk
- 3 Tbsp Log Cabin Original Syrup (#1590)
- 1/2 tsp AP Ground Korintji Cinnamon (#1005)
- 1/2 tsp nutmeg
- Rich’s On Top Original Whipped Topping (#2413)
- Wafer stick, optional
- Pint-sized mason jars
Instructions:
- First, add pumpkin pie filling, vanilla pudding mix, milk, maple syrup, cinnamon and nutmeg to a kitchen aid bowl. Mix until well combined, then transfer to a piping bag. Use a Gallon Ziploc Bag (#), with a small cut in one corner, if you don’t have a piping bag handy.
- Now, assemble the jars by placing 2 eclairs in the bottom of each jar. Follow by piping a layer of Rich’s On Top, then a layer of the pumpkin pe mix. Repeat until the jar is full, ending with a layer of Rich’s on Top.
- Garnish with a pinch of cinnamon, an eclair, and a wafer stick. Enjoy!
Makes approx. 6 to 8 jars
