Pineapple Coconut Ice Pops
Ingredients:
- 2 cups Pineapple Cubes (#8277)
- 14 oz can light, unsweetened coconut milk
- 1 Tbsp Busy Bee Honey (#1148)
- 1 tsp coconut extract
- Dash sea salt (#1146), optional
- 1/4 cup shredded coconut, optional
Instructions:
- Add pineapple, coconut milk, honey, coconut extract, and salt to a blender. Blend until completely smooth.
- Then, add shredded coconut into the mixture until well combined.
- Divide mixture evenly between Ice Pop Molds.
- Next, freeze until pops are solid, approximately 3 hours. Serve frozen.
