Veggie & Ham Breakfast Casserole
Mmm, waking up to the smell of a casserole in the oven brings back fond memories of growing up. This recipe is also a great way to sneak veggies is for the kiddos! You could also add Fajita Blend Vegetables (#1069), Quincy Gold Shredded Hashbrowns (#2421), mushrooms, or even zucchini.
This delicious breakfast casserole features broccoli, spinach, cubed ham steaks with a cream and egg mixture topped off with bubbly cheese. Try adding a crust by layering Ore-Ida Golden Patties (#2429 or #2427) along the bottom of the pan, followed with the ham mixture, eggs, and cheese.

Veggie & Ham Breakfast Casserole
Ingredients:
- 1 cup Flav-R-Pac Chopped Onion (#5772)
- 2 Tbsp Kirkland Minced Garlic (#1289)
- 2 Tbsp Kirkland Salted Sweet Cream Butter (#172)
- 1-2 Farmland Bone-In Ham Steaks (#5659), thawed and cubed
- 12 oz. Flav-R-Pac Broccoli Florets (#8197), thawed, drained and chopped
- 12 oz spinach
- 8 oz. Tillamook Shredded Cheddar Cheese (#1866)
- Regal Coarse Sea Salt (#1147) and AP Coarse Black Pepper (#1028), to taste
- 1/3 cup heavy cream
- 12 eggs
Instructions:
- To begin, preheat oven to 350F and spray a USA Pan 9×13 Pan (#1606) with Vegalene Butterly Delite (#1576).
- Next, melt the butter in a skillet. Once melted, add the onion and garlic and saute for 2 minutes. Add cubed ham and continue the cook until the ham begins to brown. Set aside to cool.
- Now, press excess water out of broccoli. Toss together in a bowl with the spinach, then add the ham mixture. Pour along the bottom of the prepared pan.
- In another bowl, whisk together the eggs, cream, salt, pepper, and half of the cheese. Pour on top of the broccoli and ham mixture, then top with the remaining cheese.
- Place in the oven and bake for 30 minutes, or until eggs are cooked through and cheese has started to brown.
