Mini Breakfast Quiche
Ingredients:
- 12 mini pie shells
- ¼ cup chopped onion (#5772)
- 1 tbsp butter
- ¼ cup mini broccoli florets (#8197)
- ¼ cup grated cheddar cheese (#1651)
- 4 oz Canadian bacon (#4047)
- 3 tbsp chopped tomatoes
- 2 eggs
- ½ cup milk
- Salt (#1146) and pepper (#1029) to taste
Instructions:
- First, preheat oven to 350 degrees.
- Once the oven is preheated, bake your mini pie crusts for about 8 minutes
- In a buttered medium-sized skillet, start browning your onions over medium heat.
- Then, place the browned onions, broccoli, bacon, tomatoes
and cheddar cheese into your baked pie crusts (about 1 teaspoon of each ingredient). - Whisk together eggs, milk, and salt and pepper. Pour egg mixture into each of your mini crusts.
- Next, bake for about 15 minutes or until quiche is set. Allow
to cool for 10 minutes before serving.
