Chili Lime Pierogy Stir Fry
This Pierogy dish will blow your mind! It is full of flavor and has a nice crunch from the veggies, which pairs well with the soft filling in the pierogies.
What is a pierogy?
Our pierogies are hearty, tender pasta dumplings filled with a rich, creamy blend of mashed potatoes and Cheddar cheese. You can boil, pan fry, oven bake, deep fry or steam these little guys and eat them as is, but we have recently discovered some really great recipes to use them in, including this Chili Lime Pierogy Stir Fry.

Chili Lime Pierogy Stir Fry
Ingredients:
- 1 (2.86 lb.) bag Classic Cheddar Pierogies (#5621)
- 2 Tbsp Avocado Oil (#3516)
- 1 lb. Chicken Breast Chunks (#2620)
- 12 oz. Stir Fry Vegetables (#5309)
- 1 package carrot noodles
- 1 can coconut milk
- ½ cup sweet chili sauce
- ¼ cup soy sauce
- ¼ cup lime juice
- ½-¾ teaspoon red pepper flakes
Instructions:
- Place pierogies in boiling water for 3 to 5 minutes; set aside.
- Next, sauté the chicken and vegetables on medium-high heat until heated through.
- Then, add carrot noodles and pierogies to pan.
- Now, mix together coconut milk, chili sauce, soy sauce, lime juice and red pepper flakes, and add to stir-fry mix; heat through before serving.
