Cauliflower Soup with True Lemon
Ingredients:
- 1/2 Tbsp Avocado Oil (#3516)
- 1/2 cup finely chopped celery
- 1-1 1/2 cup chopped onion (#5772)
- 1/2 tsp curry powder (#1419)
- Salt (#1146) and pepper (#1029), to taste
- 1 1/2 cup diced potato (#8569)
- 1 quart vegetable broth
- 5 cups cauliflower florets (#6383)
- 1 bay leaf (#1753)
- 1/4 cup fresh parsley, chopped
- 3 Tbsp sour cream
- 2 True Lemon (#1689) Packets
Instructions:
- First, heat the avocado oil in a saucepan over medium heat.
- Then, add the celery, onion, and curry powder and season lightly with salt and pepper. Cook for about 5 minutes.
- Add cauliflower, potato, broth, and bay leaf to the pot and bring to a boil over medium-high heat. Cover and simmer about 15-20 minutes, until vegetables are tender.
- While that simmers, mix the parsley, sour cream, and True Lemon in a bowl then set aside.
- Remove the bay leaf, and puree the soup. Only blend half for a chunkier soup.
- Serve the soup in bowls with a dollop of lemon parsley cream, and extra chopped parsley, if desired.
