Chicken & Dumpling Stew
Ingredients:
- 4 Kirkland Boneless, Skinless Chicken Thighs (#1317), thawed and patted dry
- 1/4 cup Turkey Brand Flour (#2285), seasoned with Regal Fine Sea Salt (#1146) and AP Coarse Black Pepper (#1028)
- 2 Tbsp BBF Avocado Oil (#3516)
- 2 cups Flav-R-Pac Grande Classic Sunshine Carrots (#5520)
- 1 AP Bay Leaf (#1753)
- Regal Fine Sea Salt (#1146) and AP Coarse Black Pepper (#1028)
- 12 oz. Marzetti Precooked Southern Style Dumplings (#2280)
- 1 1/2 cup Flav-R-Pac Chopped Onion (#5772)
- 2 stalks celery, cut into 1/2 in. pieces
- A few springs of fresh thyme
- 4 cups chicken broth (#1038 base)
- 1/4 cup fresh parsley, chopped
Instructions:
- First, coat the chicken in the flour mixture.
- Meanwhile, preheat a pot with the oil. Once hot, add the chicken, skin side down, and cook for about 5 minutes or until browned. Flip and brown the other side, then remove from the pan and set aside.
- To the pan, add the onion, carrots, celery, bay leaf and thyme to the pot. Add more oil, if needed, and season with salt and pepper. Saute for a few minutes or until slightly tender.
- Now, add the broth, Southern Dumplings, and chicken. Cover and allow to simmer for 30 minutes, or until the vegetables are tender and the chicken has reached an internal temperature of 165°F.
- Then, divide between bowls and garnish with parsley. Serve with fresh Beehive Rolls (#8925), if desired.
