Cosmo Blast Brownie Ice Cream Sandwich
Kids are back in school, but that doesn’t mean we have to stop enjoying some of our favorite summer treats- like ice cream sandwiches! Fieldstone Bakery Cosmo Blast Brownies (#1768) are great for packing in school lunches or for a quick snack on the go, but once we discovered using this in other recipes…game.over.
These two ingredient ice cream sandwiches have a scoop of ice cream stuffed between dark, chewy brownies topped with fudge icing and colorful candy-coated chocolate pieces.
Tips for getting the most out of your ice cream sandwich
- Prescoop the icecream onto a Crestware Baking Pan (#5957). Once scooped, place back in the freezer until you’re ready to assemble the sandwiches.
- Once assembled, dip in melted chocolate and freeze until set.
- To enjoy at a later date, simply wrap in Parchment Paper (#1153) and store in a freezer safe container or Gallon Ziploc Bag (#1979).

Cosmo Blast Brownie Ice Cream Sandwich
Ingredients:
- 2 Fieldstone Bakery Cosmo Blast Brownies (#1768)
- 2 scoops of your favorite ice cream
Instructions:
- First, cut each brownie in half.
- Then, add a scoop of ice cream on top of one half of the brownie, followed by the other half. Enjoy!
